The Auxerrois vineyards extend over hill-slopes sited in ten or so communes adjoining Auxerre on the south and south-east, covering 1,300 hectares and producing a complete range of regional burgundies - reds, whites, ross, and the sparkling Crmant de Bourgogne. These vineyards are currently undergoing a major renovation.
Wines are produced from classic Burgundian grapes : whites from Chardonnay and Aligot, reds
from Pinot Noir and Gamay. Other varieties grown are Sauvignon, a recent introduction, for
whites and Csar for reds.
